Homemade Cheesecake

Used to make no bake cheesecakes years ago but had basically forgotten how I did it.  Recently, as I wanted to try making cheesecakes again, I went to buy the cream cheese to make the cheesecakes.  However, if I had bought a 250g slab, it would have cost quite a bit.  Was looking to get a 1kg slab, but as it was out of stock, ended up with a 2kg slab instead.  Thus, it was cheesecakes galore over the next 1 - 2 weeks!

Started off with the easiest:-  this is what I call the easy no bake cheesecake

Next was the orange mascarpone cheesecake.  This was the only cheesecake that used two types of cheeses - cream cheese and mascarpone cheese.

This feather light marble cheesecake tastes a little like a normal light sponge cake.

Devil's cheesecake
Found the devil's cheesecake a little too rich for my liking.

Next I tried the chocolate marble cheesecake.  The chocolate covering was what gave this cheesecake its chocolate taste.

Mango cheesecake










Tried something slightly different with the mango cheeesecake.  Placed real mango slices on top of the cake and hundreds and thousands at the side to make it colourful. Not too good an idea of the hundreds and thousands as the colours tend to run...

The chocolate chip cheesecake was one of the hot favourites as well as the mango cheesecake and orange mascarpone cheesecake. For an easy no bake cheesecake, the pineapple cheesecake is a great homemade cheesecake to start with.
